Pickled Cucumber

Great flavour and texture, sweet and sharp. A little change to the recipe I used dark brown sugar instead of light brown sugar, it gives a slightly darker syrup but is a wonderful flavour. I also added a sprig of fresh fennel.

Cucumber,onion, white wine vinegar, light brown muscavado sugar, mustard seeds, turmeric, ground clove, salt
