Chunks of homegrown jerusalem artichokes pickled in a spiced cider vinegar.
These went down well, will definitely be making more later in the year.

Ingredients

Jerusalem artichokes, salt, cider vinegar, sugar, whole black peppercorns, coriander seed, allspice berries, red peppercors, turmeric, red hot chilies
