My own homegrown jerusalem artichokes, dug up on Saturday, scrubbed and soaked overnight in salt water then turned into this wonderful looking relish.
First attempt at making this so hope you all enjoy.

Homegrown Jerusalem artichokes, green cabbage, onions, sugar, yellow and red bell peppers, flour, mustard, cider vinegar, salt, mustard seed, turmeric, celery seed, black pepper, hot sauce
